Lately- Soups & Breads

As I look back on our recent menu, I see several types of soups and breads! So, with winter being in full swing, I thought I’d share some of the ones we have been enjoying. Again, I will say that I often do not have a recipe to follow. Eek! Some people don’t like that when I mention it. But, having a good formula for soup making can be priceless when you’re seeking to run a from scratch kitchen.

Chick pea and Butternut Squash Curry with Cornbread

For this recipe, I tweaked one we found on pinterest and liked. You can see how I changed a few things, but mostly I kept the spices the same. We do lessen the curry powder by half! For the cornbread, I often do the good ole Betty Crocker recipe. I am Southern and so I grew up with cornbread, not corn light (sweet) bread. However, my family likes the sweet version too. So I switch it up.

Chicken Noodle Soup

I love this photo. I took it to show how gelatinous the broth was! After cooking, I refrigerated the soup and this is what happened! I made a very small batch for a friend at church and gave her some broken whole wheat spaghetti noodles for her to add if she wanted to. This is just broth, chicken, carrots, cumin, and S/P. No special secrets!

Black-eyed Peas for New Years

Traditionally, southerners eat black eyed peas of some sort for New Years’ Day. We decided to just give the package recipe (Aldi) a try this year and it was yum! Here is one that’s similar. There are many ways to enjoy these versatile peas. But this was a keeper!

Beef Stew and Sourdough Artisan Loaf

Mmm… what a way to enjoy soft beef! I have already given my recipe for beef stew in a previous post! We enjoyed this batch with homemade sourdough artisan loaf using this recipe, but substituting freshly ground flour!

Chicken Pot Pie

This isn’t a soup, but I did use leftover chicken veggie soup to make it! This photo doesn’t show the freshly milled pie crust… but it was a yummy supper that night! This is one of my all time favorite meals. I love a pinch of dried thyme in my pot pies!

Cheeseburger Chowder with Biscuits

This comfort food supper was lovely. I would have normally added more veggies, but it was a homeschool group day and so I chose a fast version. Dicing about 5-6 cups of red potatoes, adding about 2/3 lb browned ground beef, about 2/3 block cream cheese, 1 cup frozen corn, and then broth, milk, and cumin, S/P! It cooked all day and the potatoes held their shape because I added cold liquid from the start. On some hurried days I may not do this, but this day it cooked from 6:45 am to about 5:30 pm! The biscuits were whole wheat and we added butter or jam! Try this recipe!

Now… what if I have lots of leftover soup from all of these batches??

  • Use zipper freezer bags or these lovely soup silicone molds to freeze into batches
  • Turn one meal into something else (above: chicken pot pie)
  • Take a meal to a single neighbor, older couple, or friend who may need a quick meal

    We’ve had baked potato soup, beef barley, pasta fagioli, and what I call potato stroganoff soup. Yum!

    Mmm… pot pie with thyme! I didn’t realize that was the flavor I loved until I recently made a pot pie recipe that only called for thyme (with regard to seasoning). It was mouth-watering! My girls loved it, too, so it needs to make another appearance on the menu soon! 🙂

Honey and the Hen!

Currently I don’t have any bees (or honey). We do have meat chickens now – yay!
And we also recently purchased 20 laying pullets. I live with my Sweet Husband and 3 kids in Central Illinois. I love homesteading, homemaking, and homeschooling. We are thankful to be saved by grace in Jesus and seek to follow Him and His Word. I am originally from Tennessee and one of six children, using much of my upbringing in what I do and love now.
