MEAL IDEAS- protein snacks

Sometimes it is helpful to have snacks with extra protein made for eating anytime of day. My Sweet Husband gets up early and eats fairly quickly. I like to have some protein dishes pre-made sometimes for him to add to his breakfasts. We also can generally need a nice boost of protein in the afternoon to give us some energy for the rest of the day.

French Toast

Sometimes when I have extra sourdough or whole wheat bread, it’s lovely to use for French toast. It freezes nicely and can easily be put into the toaster when you’re ready for it. Add some butter and maple syrup or top with powdered sugar and sliced fruit. Just whip some eggs and a few tablespoons of milk, dip the bread on both sides, and cook on a hot skillet until browned nicely on both sides.

Sausage Balls

Easy to make and quick to bake, these also freeze nicely… if they last that long.

  • 1 lb. ground breakfast sausage
  • 1-2 cups shredded cheddar cheese
  • 2 cups of DIY bisquick mix

Mix all ingredients in a KitchenAid stand mixer or very thoroughly by hand. Portion golf ball sized balls and form, adding to lined baking sheet. Bake for 10 minutes at 350*. Makes approx. 20.

Wrapped Hot Dogs

I have mentioned these before and we like to have them as supper sometimes! We use Nathan’s hot dogs brand as they have limited ingredients and are cleaner than other brands. Lately I’ve liked eating mine with homemade mustard.

Simple Pizza Dough (for wrapping)

  • 2 cups whole wheat flour
  • 2.5 tsp active dry yeast
  • 2 Tbsp. cane sugar
  • 1/2 tsp. salt
  • 1 cup warm water

Mix all above ingredients well and cover. Let stand 30 minutes if you have time, otherwise you can use immediately. Divide dough into 8 pieces and pat into rectangles. Wrap each hot dog and place, seam side down, on lined baking sheet. Bake for 12-15 minutes at 375*.
