Food Journal- March

As the grass gets greener, I am sure our tastes will lean more toward fresh foods! But, right now, we are still enjoying a lot of soups and stews and breads, tasting the foods of our last summer labors. We have finished eating our potatoes. The butternut squash are still fine and being eaten as we go. And, our canned and frozen items taste delish! Here are some foods we have been eating lately.

Fresh Bread

I often make bread dough and turn it into different things. On this day, I made rolls/buns as well as this cinnamon loaf. Same dough- two different uses. And… I was pretty tickled with this swirl!

Pot Roast et al

Pot roast is quite a treat around here. And, since we got our 1/4 beef in late February, we are now able to enjoy one again after a spell without! This day I made an arm roast, adding dill, onion powder, and S/P to taste. We devoured it with the carrots and potatoes. On the second day, I made some fresh pie crust (not nearly as hard as we make ourselves believe it is) and added the ingredients of the slow cooker meal all mashed inside. Finally (not pictured) I used the roast for beef and rice to take to our monthly fellowship dinner at church. We sure got a lot out of that first slow cooker dish!

Skillet Chicken

Yes…. we have a lot of chicken! Yum! And all homegrown. How can ya beat it? Today, I cut the breast meat off the thawed bird and added coconut aminos (soy-less version of soy sauce), S/P and let it marinate for the afternoon in the fridge. The rest of the bird went into the slow cooker with my standard meat stock/broth ingredients. I served the skillet cooked chicken for supper with sweet potatoes fries and salad.

Chicken Stew

The rest of the chicken I deboned and added back to the slow cooker with broth, chunks of sweet potatoes, and sliced carrots (unfortunately, all of the potatoes I had bought were green!). To this I added cumin, S/P. We ate this meal with hot cornbread pancakes. Oh. Man.

Chicken Chili

Finally, I made a pot of chicken chili (not white or creamy style) another day this month. I soaked both pintos and red kidney beans in water with a splash of ACV overnight and then cooked them in the slow cooker. I added chunks of chicken, tomato juice, broth, cumin, paprika, S/P, and, since I had it opened and on-hand, salsa verde I had made in 2024. A nice and fun addition.

So, there you have it. A simple look into our simple home and simple March meals. We are all looking forward to the variety fresh foods bring in the coming spring and summer months. What are you and your family eating?

Currently I don’t have any bees (or honey). We do have meat chickens now – yay!
And we also recently purchased 20 laying pullets. I live with my Sweet Husband and 3 kids in Central Illinois. I love homesteading, homemaking, and homeschooling.
