TODAY- April Edition

These beautiful spring days are always some of my favorite! Cool, fragrant breezes. Delicious rains. Or sunshine that’s tantalizing from inside the kitchen window.

On this particular April day, I found myself knee deep in sourdough baking, along with other kitchen and homesteading endeavors!

8:27 a.m. I made some sourdough English muffins out of a ferment that sat for about 24 hours. The recipe is from Farmhouse on Boone and we have really loved the ease and variety in uses of these simple muffins.

9:14 am Snack time! We are fairly routine and somewhere between 9-9:30 is snack time for the kids and I. They had already been working diligently on their schoolwork and, because I had made some English Muffin breakfast sandwiches for Daddy to eat while we are out of town later this week, I made extra eggs for a yummy protein boost that morning.

9:16 am Yes…. just two minutes later, my sourdough artisan loaf was finished baking and needed to cool on the counter. This style loaf has me and a friend working on ‘the perfect loaf’ currently. And, I must say, Ballerina Farm’s recipe has been the best I have ever tried so far! Not only beautiful, but crisp and also soft inside. We love this kind of bread as toast.

10:02 am Am I baking too much this morning? Ha! I generally batch bake in bulk so that we have plenty of breads in the freezer. Here, it was time to get my sourdough rolls, another Farmhouse on Boone recipe, though tweaked a tad, out of the oven. Wow! What a beautiful morning for sourdough! My starter has been perfect lately!

11:55 am The kids and I wanted homemade pizza (sourdough, anyone?!), so we got out a bulk block of pepperoni I bought at our salvage store locally. I used my mandoline and sliced it with the ‘thin’ blade. The slices were perfect! We used some on the pizza, saved some in the fridge for sandwiches, and used my new vacuum sealer (thanks to my Dad for his Christmas gift to me!) to freeze the remainder. I was thrilled!

12:11 am Lunch time! We enjoyed homemade pizza, sauerkraut, and carrot sticks with an audio Adventure in Odyssey.

3:09 pm After a restful afternoon of play, rest, and a show, the kids and I headed outside to put some barbed wire around our chicken coop. As mentioned in my ‘about me’ for this blog, we had a skunk family come in and annihilate our laying hens. So, since we are letting our meat birds out to graze now that they have feathers and plan to have the laying hen chicks in the coop and pasture once the meat birds are processed, the boys and I put some barbed wire up to help deter said skunks. We. Shall. See.

4:31 pm Back inside, I folded laundry and listened to a vlog or two while the kids went next door to help Granny with a few projects.

5:52 pm After rising several hours, the sourdough pizza dough (second batch) was ready to divide and freeze for later. This recipe from Better Baker Club on Pinterest has been excellent!

6:06 pm The kids came back from Granny’s and we made build your own Taco Bowls for supper, complete with bone broth rice, grass fed beef, homegrown corn, soaked pintos, fermented salsa, and freshly grated cheese. We finished our audio Adventure in Odyssey from lunchtime about the American Revolution.

What an excellent day! I love full ,productive days that aren’t overwhelming. I hope your days are just as lovely as you live in each moment. On to May Days!

Welcome to
Honey and the Hen!

Currently I don’t have any bees (or honey). We do have meat chickens now – yay!
And we also recently purchased 20 laying pullets. I live with my Sweet Husband and 3 kids in Central Illinois. I love homesteading, homemaking, and homeschooling. We are thankful to be saved by grace in Jesus and seek to follow Him and His Word. I am originally from Tennessee and one of six children, using much of my upbringing in what I do and love now.
